Matilda F. Nader’s Shrimp Devils
1 lb Fresh shrimp, headed, peeled, deveined and ground fine
1 Small green bell pepper, seeded and minced fine
1 Small Datil pepper, seeded and minced fine
3 Small stalks of celery, minced fine
1 Medium onion, minced fine
Few sprigs of parsley, minced
3 T Flour
Water
2 Eggs, beaten
Salt, red and black pepper to taste
Combine the shrimp, green bell pepper, datil pepper, celery, onion and parsley. In a separate bowl combine the flour with a little water to make a medium thin paste and then add the eggs. Add the salt, red and black peppers and the shrimp mixture and mix well. Drop by spoonfuls into hot cooking oil and fry until golden. Serve hot with datil pepper sauce. Yield: about 20 devils.
