Serve Bubba’s pilau for Easter

Want a hot time in the old town for Easter? Try this recipe.

 Bubba DuPont’s Sausage Pilau

½ lb     Salt pork, chopped small

2          Small sweet onions, chopped

½         Green bell pepper, chopped

3          Datil peppers (or a few teaspoons of Datil pepper sauce)

1          14oz can of stewed tomatoes

1          14 oz can of tomato sauce

1 lb      Smoked sausage, sliced into chunks

2 c       Water

2 c       Rice

Render the salt pork in a heavy bottom pot. When the pork pieces are crispy, add the onions, bell pepper and datil peppers and sauté until opaque. Add the stewed tomatoes, tomato sauce and sausage. Cook until the consistency is thick. Pour in the water and bring the mixture to a rolling boil. Add the rice. Lower the heat and simmer for 40 minutes or until the rice is done.
