Datil pepper jelly Reddy style
Reddy Cox’s Datil Pepper Jelly
1 c Datil peppers
2 c Green bell peppers, seeded and roughly chopped
7 c Sugar
3 c Vinegar
1 Package of Sure-Jell
3 Drops of green food coloring
In blender, puree all datil peppers and green bell peppers. Pour into a large pot and add Sure-Jell and vinegar and bring to a boil. Add sugar and bring to a boil again for 1 minute. Add food coloring. Pour into sterilized jelly jars and seal. Process in a water bath for 10 minutes. Serve with cream cheese and crackers.
